Maybe someone can help me with my question.
If you have a recipient, that does not load the pictures in a newsletter, his opening of the email can not be counted (no 1-pixel image).
However, if this user clicks on a link in this newsletter, will he then be counted in the opening rate?
Please advice.

Openings of text mail recipients can not be registered technically. So, you are right, there is an invisible opening rate (which is not displayed) but can be calculated in the following way:
text mail openers = text mail clickers / HTML mail clickers x openers
Actually, the commercial version of OpenEMM shows this value, but it is just educated guessing.

How about HTML recipients who have set their mail client to not to show pictures? In this case the 1-pixel pic is not loaded.
However, if these users would click a lick it could be counted. Thus it could then be counted in the opening rate.

A mail opening is only recorded in the OpenEMM database if the tracking pixel is loaded, i.e. image suppression prevents recording of openings.
